Healthy Recipes for Summertime
It’s not quite summer, but it’s one of my favorite seasons. Especially after the tough times recently, cooking has become something that I am doing more frequently. There is something therapeutic to chopping and stirring and sautéing, and I’ve been looking at a whole bunch of healthy recipes. Staying healthy is not only good for our immune systems, but so many healthy recipes taste incredible! Here are my recent favorites:
-Shells and cheese: Okay, this isn’t healthy per se, but it’s healthier than the boxed version of hamburger helper! It’s a cinch to make, and so yummy. Whether you are cooking in your dorm (if you have a hot plate) or apartment, this is one even the newest cook can easily execute. Find the recipe HERE.
-Healthy homemade pizza: Pizza is delicious, but can be made very healthily. This version HERE is a really good alternative to takeout pizza that has lots of preservatives. I love the red bell peppers on it, and the delicious crust. It can also be modified for people with food allergies, or for families with young children, and you can of course swap out toppings for the things you love most! We like chicken sausage, and arugula for a fun twist.
-Chicken noodle soup: This very healthy version of chicken noodle soup is perfect for a chilly day, but summertime doesn’t mean that you can’t make a great soup! It is packed with veggies, and full of flavor. You can sub out the noodles or pasta for something allergy-friendly, or keep it low carb with more veggies. -Grilled chicken schwarma: This delicious, Turkish inspired dish is PACKED with flavor, and super easy. Plus, you can grill it and not heat up the whole house. Add in a delicious yogurt sauce or feta cheese salad, and some yummy naan bread. If you’re feeling extra fancy, a rice pilaf would be delicious, and the perfect summertime dish.
